Taste of Tomorrow
"Taste of Tomorrow" is a new pioneering project based on the principles of the bioarchitecture, that proposes an innovative concept for the eating out experience: Glacial Drip.
A visionary model that anticipate the future needs of sustainable dining, creating an active ecosystem, a biotechnological garden that reconnects human with nature and offering a cutting-edge gelato experience.

Bioarchitechture
The Glacial Drip is a regenrative bio-architecture, equipped with 13 bioreactors that use non-direct sunlight to develop edible algae cultures.
The bioreactors actively captures the CO2 equivalent of 10 mature trees and they also filter air pollutants and release oxygen and nutritional biomass rich in protein and vitamins.
This pioneering technology demonstrates how the biological intelligence of microalgae can support human and planetary health.

The combination between gastronomy and bioarchitecture unlocks a world of unexplored culinary possibilities.
Visitors are invited to explore a fascinating biotechnological garden, where alpine plants and bioreactors coexist in perfect harmony, creating a unique balance between biodiversity and innovation.
At the center of this experience is the tasting of ''Gelato of the Future,'' the Italian frozen dessert: algae paste, once dried and pasteurized, becomes a highly nutritious pant protein powder, a "super food" that will then be used as ingredient to make new gelato flavours.
It’s a sensory journey where every bite tells the story of a sustainable future.

Taste of Tomorrow is the result of the collaboration between SIGEP WORLD, The NE[S]T and ecoLogicStudio.
The NE[S]T is a firm specialized in the design and construction of architecture in harmony with nature. With solid experience in international collaborations, the team works with design firms and leading companies in innovative multi-material prefabrication. Led by Paolo Scoglio, architect and Design Manager, the team consists of professionals experienced in designing spaces in symbiosis with Nature.
ecoLogicStudio is an architecture and design innovation firm specialized in biotechnology for the built environment.
Co-founded in London in 2005 by Claudia Pasquero and Marco Poletto, ecoLogicStudio has built a unique portfolio of nature based design solutions dedicated to the imminent impact of climate change.
