Petra 3 is a Type “1” soft wheat flour made from 100% climatically selected wheat, stone-milled using the Augmented Stone Milling process. The protein quality of the selected wheat gives the dough excellent natural extensibility, without the use of additives. A natural source of fiber, it delivers a distinct, full wheat flavor. The dough is stable, clean, and easy o work with.
