Stefano Laghi

Stefano Laghi has dedicated a good part of his business to training, for him pastry is a ‘tidy patchwork of techniques and balances. Of production and inventiveness. Of chemistry and creativity. Of commitment, research and entrepreneurship. Of sacrifice, conviction and growth'. A professional philosophy, which has always accompanied him on his career path: he won several competitions, including the World Pastry and Cookery Championship in Basel. For two years, he served as director of the Étoile Academy, at the same time attending important Italian and Spanish pastry schools and writing pastry books for Italian Gourmet. He is currently production director of the pastry shop Maisona Antonella 1986 (Alessandria) and deputy director of the Accademia Maestri del Lievito Madre e del Panettone.
