Giuseppe Piffaretti

Coppa del Mondo del Panettone is the brainchild of Giuseppe Piffaretti, a master pastry chef who discovered his passion for pastry making at the age of fifteen, on a course with teacher Mimmy Steiger. After his studies, he took over a bakery in Mendrisio, where he trained more than 25 apprentice pastry chefs and confectioners from 1982 to the present day. At the age of 40, he returned to school to undertake the Mastery Course (a Swiss equivalent of the M.O.F). Awards include a silver and two bronze medals at the Gelato World Cup at SIGEP in Rimini.

For 15 years, he was the face of pastry on Swiss Italian TV (RSI). He teaches in professional schools such as Richemont Schule in Lucerne and Lausanne, Chocolate Academy Zurich, Ecole nationale supérieure de pâtisserie in Yssingeaux, EPGB Gremio de Pasteleria in Barcelona, Cast Alimenti in Brescia, Gustar in Pistoia, Fugar in Rimini, Carpigiani University, Mälmo Sweden, Pastry School in Portugal.

In 2018, he created the Panettone World Cup, the first ever international competition dedicated to Italy's most famous leavened product. Over the course of four editions (Lugano 2019- Lugano 2021- Milan 2022- Milan 2024), it has involved thousands of master pastry chefs all over the world, with the aim of promoting and spreading knowledge of panettone with training sessions, masterclasses and the competition.
