AIBI, the Italian Association of bakery Ingredients, which represents companies in the ingredients sector for bread, pizza and pastry within ASSITOL, presents the review of the Cerved research on the bakery and baked goods market
The survey explores the evolution that the art of baking is experiencing and outlines the main consumption trends in Italy. At the center of the study, as usual, is the figure of the baker, committed to enhancing the craftsmanship of their products and, at the same time, called to satisfy an audience increasingly in search of taste and health, who do not forget tradition but look with interest at the contaminations with other food cultures.
