Preview of the Cerved research on the bakery and baked goods market, promoted by AIBI-ASSITOL. The survey explores the evolution that the art of baking is experiencing and outlines the main consumption trends in Italy. At the center of the study, as usual, is the figure of the baker, committed to enhancing the craftsmanship of their products and, at the same time, called to satisfy an audience increasingly in search of taste and health, who does not forget tradition but looks with interest at the contaminations with other food cultures. Speakers will include Palmino Poli, president of ASSITOL, Maria Maltese, curator of the research, and Alberto Molinari, president of AIBI.
