On the occasion of SIGEP 2026, the international conference "The Bread of the Future: Bread, Freshness and Genuineness for the Human Being" organized by the Italian Federation of Bakers will be held on Saturday, January 17th from 4:00 PM at the bakery Arena in pavilion D8. This event will be a moment of discussion and reflection dedicated to the central role of bread in the present and future of food and economy.
The conference will address the future of bakers and the return of bread as a protagonist on tables and in daily consumption. An ancient product that returns to the spotlight, a symbol of authenticity, freshness, and sharing, destined to reclaim a central place in consumer spending. A return to the origins is envisioned: large loaves of bread, designed to be consumed by families for lunch, dinner, and snacks, just like in the past.
Through high-profile interventions, the cultural, social, and economic value of bread will be analyzed, with a careful look at Mediterranean traditions and the new needs of contemporary populations.

· Dominique Anract, World President of UIBC Bakers, who will bring a global perspective on the situation and prospects of baking worldwide;
· Amèrico Couto, for Portugal and Europe, who will delve into the role of bread in populations living on the shores of the Mediterranean;
· Leonardo Spadoni, Vice President of the Italian Federation of Bakers, who will illustrate the vision and commitment of Italian baking in valuing bread as an essential, identity-defining, and sustainable food.
