At SIGEP, Bazzara presents the TCE Manifesto, an initial mapping of the state of the art of Italian espresso that emerged through the words of the protagonists of Trieste coffee Experts 2025. The document revisits some of the key themes discussed during the summit: from the value of the Italian cup to the identity of Made in Italy, from associationism to sustainability, offering a summary of the contents that will guide the drafting of the first edition of the TCE Paper.
