born in 1991. When he grew up after classical high school he thought he would be a lawyer, then he discovered by chance during a summer season at the end of school the world of baking and was fascinated by it. He decided right away that this would be his path, strengthened also by a great passion for cooking that he imagined would never become his job. His first stop was the Verace Pizza Napoletana Association, where he decided to train, and then moved on to practice for two years at the seasonal AVPN-affiliated pizzeria ‘Reginella’ where he ate pizza as a child. In 2014, he decided to throw himself into his personal adventure with A'mmasciata, with the declared intention of being a Neapolitan pizzeria open all year round, and less than a year later, he obtained AVPN affiliation and was then recognised as Brand Ambassador for Calabria. In 2019, he participated in the AVPN Olympics, finishing in 7th place. 
 
His choice in the pizza world is always to do what he believes in. No reinterpretation, but absolute valorisation of the Neapolitan pizza tradition, espousing the STG specification. A long and not always easy path, but one that has made him recognisable for his style and choice. After 10 years of A'mmasciata he says he is proud of the choices he has made and above all of not bowing to fashions or trends. Among his studies, Luca attended numerous gluten-free courses and then decided to found the start-up Amonoglù for the production of gluten-free pizza bases designed for pizzerias and restaurants, an idea born and developed to increasingly expand the offer for those suffering from coeliac disease by giving them the opportunity to eat a good pizza.
