José Romero, a master of cooking, pastry making and panettone making, began his adventure in the world of pastry making in 2007, joining the École de Pâtisserie in Barcelona. Thanks to his curiosity and innovative spirit, he contributed to the school's transformation into a European reference centre. In 2012, he discovered panettone, turning a curiosity into a philosophy. With passion and study, he developed a unique method and founded the Best Panettone Competition in Spain in 2016. His decades of experience are reflected in the book, which reveals innovative techniques, such as the use of cold, for an optimal quality panettone, consolidating him as a recognised expert.
