David Pasquiet

Biography

David Pasquiet, originally from Switzerland, is a visionary artisan who has transformed Swiss chocolate through creativity, authenticity, and uncompromising quality. Born in 1969 in Deux-Sèvres, he discovered his passion for gastronomy early and entered Noirmoutier Hotel School at thirteen. His career took him across Europe before settling in Switzerland in 1988, where he became Head Pastry Chef at the prestigious Crans Ambassador in Crans-Montana. In 2005, alongside his wife Virginie, David converted a former nougat workshop in Crans-Montana into an artisan chocolate atelier, founding David l’instant chocolat. Their philosophy blends craftsmanship, premium raw materials, and bold creativity. Rapid success led to boutiques in Sion and Vevey and, later, a state-of-the-art chocolate laboratory in Sierre—a hub for innovation and transmission of know-how, reflecting David’s values of precision, passion, and emotional impact. Renowned for his seasonal collections—Easter, Christmas, Halloween—David continually reinvents flavors and textures, creating elegant, technically masterful pieces. His commitment to authenticity includes direct partnerships with cacao producers, notably in Peru, ensuring exceptional beans and full traceability. Every creation is entirely crafted in Sierre, guaranteeing quality and integrity. David’s excellence has earned him numerous accolades: Swiss Chocolate Master in Bern, 10th place at the World Chocolate Masters in Paris, honors at the Chocolate Awards in Brussels, and the Swiss Culinary Merit in 2023 for his contribution to Swiss gastronomy. Today, David Pasquiet stands among Switzerland’s most inspiring chocolatiers, celebrated for his innovation, artisanal rigor, and human touch.
