Claudio Sadler

Biography

Claudio Sadler, a Milanese chef born in 1956, is one of the protagonists of contemporary Italian cuisine, which he himself defines as "modern and evolving". After his hotel management studies, he opened Locanda Vecchia Pavia and Vela Blu in Costa Smeralda, before landing in Milan in 1986 with Osteria di Porta Cicca, where he earned his first Michelin star in 1991. In 2002, he obtained a second star with the Sadler restaurant in the Navigli area. Founder of Jeunes Restaurateurs d'Europe, he was President of the Le Soste Association (2012-2022) and author of eight cookbooks. He has also made his mark abroad, with restaurants in Tokyo and Beijing, and in Italy with projects such as Chic'n Quick and prestigious collaborations. Since 2021, he has been leading the Gusto by Sadler restaurant at the Baglioni Resort Sardegna, awarded a Michelin star, and is responsible for the menu at the Canova Restaurant by Sadler at the Baglioni Hotel Luna in Venice. His philosophy combines tradition, creativity, and sustainability. In 2022, Claudio Sadler became a partner of Il Circolino – Club del Gusto in Monza, a format that combines a gourmet restaurant, café, and cocktail bar, with cuisine by the chef and a drink list curated by Filippo Sisti. In February 2023, after 16 years, Ristorante Sadler moved to the elegant Hotel Casa Baglioni Milan in Brera, maintaining its Michelin star and offering a gastronomic journey ranging from breakfast to evening gourmet menu, with a cellar of prestigious labels. The historic location on via Ascanio Sforza became a space for cooking classes, private events, and team building. In 2024, Sadler Incontri was born, an evolution of Chic'n Quick: a place dedicated to sharing and gastronomic culture, with themed evenings, lessons, conferences, and private dinners, confirming the chef's innovative and convivial vision.
