Santiago Peralta (b. 1971), is an Ecuadorean entrepreneur and the co-founder of Pacari, the organic chocolate brand he established in 2002 with his wife, Carla Barbotó. Pacari started with the goal of demonstrating Ecuador not only produces the world’s best cocoa, but also the best chocolate. In 2012, Santiago was named "Outstanding Fine Chocolate Maker” by The Fine Chocolate Industry Association, the first time a Latin American received this recognition. Santiago began studying law, but his independent outlook led him to explore the path of entrepreneurship, developing a forward-thinking business strategy aligned with responsible consumption and socially and environmentally friendly production processes.
